  • 4 pieces (about 1 lb) boneless chicken thighs
  • 3 tbsp Dijon mustard
  • ½ cup heavy cream
  • ¼ cup chicken broth
  • 1 large (for serving) tomato
  • 1 tbsp (optional) fresh thyme or parsley
