Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 3 clove garlic, minced
  • 1 cup brown lentils, rinsed
  • 4 cup vegetable broth
  • ¼ cup heavy cream
  • 1 to taste salt and black pepper to taste

Instructions

    Heat oil in a pot over medium. Add onion and carrot, stirring, until softened, 5–6 minutes.

    Add garlic, cook 30 seconds until fragrant.

    Stir in lentils and broth. Bring to a simmer and cook uncovered until lentils are tender, 25–30 minutes.

    Stir in cream and season with salt and pepper to taste.
