Ingredients

  • 8 oz pasta (penne or farfalle)
  • 5 oz herbed cream cheese (Boursin or similar)
  • 2 cloves, minced garlic
  • 1 cup cherry tomatoes, halved

    Boil pasta in salted water until al dente, ~10 minutes.

    Reserve 1 cup pasta water, then drain the pasta.

    Heat 1 tbsp oil in the same pot over medium, then add garlic and cook 30 seconds until fragrant.

    Add the cream cheese and 0.5 cup pasta water, stirring until the cheese melts into a smooth sauce.

    Fold in the drained pasta and cherry tomatoes, adding more pasta water if needed for a silky texture.
