Ingredients

  • 1 medium, cubed cantaloupe or honeydew melon
  • 1.5 cups fresh blueberries
  • 1.5 cups, halved fresh strawberries
  • 1 cup fresh raspberries
  • 2 juiced lime
  • ¼ cup, loosely packed and torn fresh mint
  • 2 tbsp honey
  • 1 tsp, minced fresh ginger

Instructions

    Cut the melon in half, scoop out seeds, and cube the flesh into 1-inch pieces.

    Halve the strawberries lengthwise. Leave blueberries and raspberries whole.

    Add all fruit to a large bowl. Pour lime juice over the top and sprinkle ginger evenly.

    Drizzle honey over the fruit and gently fold everything together with a spatula.

    Add torn mint leaves and fold once more until the salad glistens.

    Serve immediately or chill for up to 4 hours.
