Ingredients
- 4 filets cod fillets
- 2 tbsp olive oil
- 1 red bell pepper
- 1 cup heavy cream
- 2 tbsp capers
- 2 tbsp parsley
- 1 tsp salt
- ½ tsp black pepper

Pat the 4 cod fillets dry and season both sides with the 1 tsp salt and 0.5 tsp black pepper.

Heat the 2 tbsp olive oil in a large skillet over medium-high. Add the cod and cook until golden and opaque, about 4 minutes per side. Remove to a plate.

In the same skillet, add the 1 sliced red bell pepper and cook until softened, about 3 minutes.

Pour in the 1 cup heavy cream and the 2 tbsp capers. Stir and bring to a simmer, scraping up any browned bits, until the sauce thickens slightly, about 3 minutes.
