Ingredients

  • 1 head romaine lettuce
  • 4 oz smoked salmon
  • 2 large eggs
  • 1 cup croutons
  • ½ cup parmesan cheese
  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 clove garlic

Instructions

    Place the 2 eggs in a small saucepan, cover with water, and bring to a boil. Boil for 9 minutes, then transfer to an ice bath until cool, about 5 minutes.

    While the eggs cook, whisk together the 1/4 cup mayonnaise, 1 tbsp lemon juice, and 1 minced garlic clove in a small bowl. Season with salt and pepper.

    Tear the 1 head of romaine into bite-sized pieces and place in a large bowl. Add the dressing and toss until every leaf is coated.

    Add the 1 cup croutons and 1/4 cup of the parmesan, and toss gently to combine.
