Classic Smash Burger

Ingredients
- ½ lb ground beef (80/20)
- ¼ tsp kosher salt
- ¼ tsp freshly ground black pepper
- 2 slices American cheese slices
- 2 buns hamburger buns
- 1 tbsp butter
- 3 tbsp mayonnaise
- 1 tbsp ketchup
- ½ tbsp yellow mustard
- 4 slices dill pickle slices
- ¼ onion white onion, thinly sliced
- 2 leaves butter lettuce or iceberg

Make special sauce by combining mayo, ketchup, and mustard in a small bowl. Set aside.

Divide ground beef into 4 balls of about 2 oz each. Do not overwork the meat.

Lightly butter the hamburger buns and set aside.

Heat a flat griddle or cast iron skillet over medium-high heat until very hot, about 3 minutes.

Place one beef ball on the griddle and immediately smash flat with a spatula to about 1/8 inch thick. Season with salt and pepper. Cook 1-2 minutes until edges are crispy and caramelized.

Flip the patty and place a slice of American cheese on top. Cook 1 minute more. Transfer to a plate.

Repeat with remaining beef balls to make 4 thin patties total.

Toast the buttered buns on the griddle for 30 seconds per side until golden.

Spread special sauce on the bottom bun.

Layer with lettuce, then stack two patties with cheese on top.

Top with pickles and sliced onion, then close with the top bun. Serve immediately.
