Ingredients

  • 1 boneless chicken breast (about 6 oz)
  • 2 slices bacon
  • 1 slice cheddar or provolone cheese
  • 1 whole wheat burger bun
  • 2 slices tomato
  • 1 leaf green lettuce
  • 1 tbsp mayonnaise
  • 1 tsp butter (for toasting bun)
  • 1 ½ teaspoon salt
  • 1 ½ teaspoon black pepper
  • 1 ½ teaspoon garlic powder
  • 1 tsp olive oil

Instructions

    Place the chicken breast on a cutting board.

    If very thick, slice it horizontally to make it thinner so it cooks evenly.

    Sprinkle salt, pepper, and garlic powder evenly over both sides of the chicken.

    Place a medium frying pan on the stove over medium heat.

    Lay the 2 bacon slices flat in the pan.

    Cook for 3–4 minutes, then flip the bacon with tongs.

    Continue cooking another 2–3 minutes until crispy.

    Remove the bacon and place on a paper towel to drain.

    Keep the pan on medium-high heat. Add 1 teaspoon olive oil if the pan looks dry.

    Place the seasoned chicken into the pan.

    Cook 4–5 minutes without moving it so it forms a golden crust.

    Flip the chicken and cook another 4–5 minutes until internal temp reaches 165°F.

    Place the slice of cheese on top of the hot chicken.

    Reduce heat to low and cover with a lid for 30–60 seconds until cheese melts.

    Spread ½ teaspoon butter on each inside half of the burger bun.

    Toast the bun halves in a pan on medium heat for 1–2 minutes until golden.

    Place the bottom bun on a plate and spread 1 tablespoon mayonnaise on it.

    Add the lettuce leaf on top of the mayo.

    Place the tomato slices on the lettuce.

    Set the cheesy grilled chicken on top.

    Break the crispy bacon slices in half and place over the melted cheese.

    Place the top bun on the sandwich and serve immediately while hot.
