Ingredients
- 8 oz large cooked prawns, peeled and deveined
- ⅓ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon fresh lemon juice
- 4 leaves romaine lettuce leaves
- 1 pinch salt and pepper

Pour the mayonnaise into a small bowl, then add the ketchup and fresh lemon juice to the same bowl.

Stir the sauce with a small spoon, mixing until the color is a light coral pink and the texture is smooth throughout, about 30 seconds.

Taste the sauce and sprinkle in a small pinch of salt and pepper, then stir to combine.

Place one romaine lettuce leaf into the bottom of each of two cocktail glasses, pressing it gently so it cups the inside of the glass.

Pour half the sauce into each glass, spreading it evenly over the lettuce with the back of a spoon to coat the bottom.

Divide the cooked prawns evenly between the two glasses, arranging them in a single layer on top of the sauce.
