Ingredients
- 2 whole anchovy fillets
- 1 whole garlic clove
- 2 tbsp lemon juice
- ½ cup mayonnaise
- ¼ cup parmesan cheese, grated
- 1 head romaine lettuce
- ¾ cup croutons

Mince anchovy fillets and garlic together until they form a paste, ~1 minute.

Whisk together anchovy paste, lemon juice, mayonnaise, and parmesan in a bowl.

Season with salt and pepper to taste. If dressing is too thick, thin with 1-2 tbsp water.
