Ingredients

  • 2 whole anchovy fillets
  • 1 whole garlic clove
  • 2 tbsp lemon juice
  • ½ cup mayonnaise
  • ¼ cup parmesan cheese, grated
  • 1 head romaine lettuce
  • ¾ cup croutons

Instructions

    Mince anchovy fillets and garlic together until they form a paste, ~1 minute.

    Whisk together anchovy paste, lemon juice, mayonnaise, and parmesan in a bowl.

    Season with salt and pepper to taste. If dressing is too thick, thin with 1-2 tbsp water.

    Slice romaine leaves crosswise into 2-inch pieces. Rinse and pat dry thoroughly.

    Toss romaine with dressing until every leaf is coated, about 30 seconds.

    Divide between bowls and top with croutons. Serve immediately.
