Ingredients

  • ¾ lb marlin fillet, skin on
  • 1 whole lime (halved)
  • ¼ cup fresh cilantro, chopped
  • 1 whole avocado, sliced
  • 1 cup red cabbage, thinly sliced
  • 4 whole corn tortillas (6-inch)

Instructions

    Pat marlin dry with paper towels. Season both sides generously with salt and black pepper.

    Heat olive oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear marlin skin-side down 90 seconds without moving. Flesh should look opaque at edges.

    Flip and sear 60 seconds on the other side. Fish should flake gently when prodded.

    Squeeze half a lime over the fish. Remove from heat and break into bite-sized chunks.

    Warm tortillas directly over a flame or in the same skillet 10 seconds per side until pliable.

    Build each taco: tortilla, marlin, cabbage, avocado, cilantro, squeeze of remaining lime.
