Ingredients

  • ¾ lb marlin steak or mahi-mahi
  • 2 cups cabbage, thinly sliced
  • 2 whole (juiced + zested) lime
  • ¼ cup crema or sour cream
  • 6 whole corn tortillas
  • 1 whole (sliced) jalapeño
  • ¼ cup cilantro, fresh

Instructions

    Pat marlin dry. Season both sides generously with salt and black pepper.

    Toss cabbage with 1 tbsp lime juice and a pinch of salt. Let sit while you cook.

    Heat olive oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Sear marlin 2 minutes per side without moving. Center should stay just opaque.

    Whisk crema with remaining lime juice and lime zest until smooth.
