Ingredients

  • 1 cup water
  • ½ cup butter
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 1.5 tablespoon ground cinnamon
  • 2 tablespoon olive oil (for greasing)

    Set the oven to 400°F and wait until the indicator light tells you it has finished heating, about 10 minutes. This ensures the churros bake evenly from the start.

    Line a baking sheet with parchment paper and use a pastry brush to lightly coat it with the 2 tablespoons of olive oil, so the churros won't stick.

    In a small bowl, stir together the 0.5 cup sugar and 1.5 tablespoons cinnamon until no cinnamon streaks remain. Set it aside near the stove.

    Pour 1 cup water and 0.5 cup butter into a small saucepan and place it over medium heat, stirring once every 15 seconds until the butter is completely melted and the water is hot, about 3 minutes.

    Remove the saucepan from heat and wait 30 seconds, then add 1 cup flour and 0.25 teaspoon salt, stirring with a wooden spoon until a thick, shiny dough forms with no flour streaks visible.

    Transfer the dough to a piping bag fitted with a large star tip. If you don't have a piping bag, spoon the dough into a zip-top bag, cut a 0.5-inch hole in one corner, and squeeze from there.

    Pipe 4-inch-long strips of dough onto the oiled baking sheet, spacing them 1 inch apart. You should fit about 12 churros on one sheet.

    Slide the baking sheet into the oven and bake until the churros are light golden brown on the surface and feel firm when you press one gently, about 12 minutes.

    Remove the baking sheet from the oven using oven mitts and place it on a heat-safe surface to cool for 1 minute, until the churros are cool enough to touch.

    While still warm, lift one churro at a time with tongs and roll it in the cinnamon-sugar mixture until fully coated on all sides, then place it on a serving plate.
