Ingredients

  • 1 lb chorizo, casings removed
  • 1.5 lbs potatoes, diced small (about 1/2-inch)
  • ½ medium white or yellow onion, diced
  • 8 count corn or flour tortillas
  • ¼ cup fresh cilantro, chopped
  • 1 count lime
  • 1 pinch salt and pepper to taste

Instructions

    Heat a 12-inch skillet over medium-high until hot, ~90 seconds.

    Add chorizo to the dry skillet, breaking into small pieces with a spoon.

    Cook chorizo 4–5 minutes, stirring occasionally, until fat renders and edges brown.

    Add diced potatoes and onion to the skillet, stirring to coat with chorizo fat.

    Cook uncovered 12–14 minutes, stirring every 2–3 minutes, until potatoes turn golden and tender.

    Season with salt and pepper to taste.

    Warm tortillas in a dry skillet 20 seconds per side, or over a gas flame until pliable.

    Fill each tortilla with 2–3 tablespoons of chorizo-potato mixture.

    Top with fresh cilantro and a squeeze of lime. Serve hot.
