Ingredients
- 1.5 lbs rotisserie pork, shredded
- 8 count corn or flour tortillas (6-inch)
- ½ count white onion, thinly sliced
- 1 count lime (juiced)
- ¼ cup fresh cilantro, chopped
- 2 tbsp white vinegar

Toss the sliced onion with lime juice and vinegar in a small bowl. Set aside to quick-pickle while you cook.

Heat 1 tbsp oil in a large skillet over medium-high until shimmering, about 1 minute.

Add the shredded pork and cook undisturbed for 2 minutes until edges crisp. Stir and break into chunks, cook 1 more minute until edges darken.

Warm tortillas directly over a gas flame for 10 seconds per side, or wrap in foil and warm in a 300°F oven for 2 minutes.

Fill each tortilla with crispy pork, a small pinch of pickled onions, and fresh cilantro.
