Ingredients

  • 1 box (15 oz) chocolate cake mix
  • ½ cup water
  • ¼ cup vegetable oil
  • 1 large egg
  • 4 tbsp butter
  • ½ cup brown sugar
  • ⅓ cup sweetened condensed milk
  • ½ cup shredded coconut and chopped pecans (combined)

Instructions

    Mix cake batter per box instructions (water, oil, egg). Divide into lined muffin tin, filling each cup halfway.

    Bake at 350°F for 12–15 minutes until a toothpick comes out clean. Cool in tin for 5 minutes.

    While cakes cool, melt butter and brown sugar in a small saucepan over medium heat, stirring often.

    Remove from heat, stir in condensed milk until smooth. The frosting will thicken as it cools.

    Pop cakes from tin. Spoon warm caramel frosting over each, then sprinkle with coconut-pecan mix.

    Let frosting set for 5 minutes before serving. Store in an airtight container up to 3 days.
