Ingredients

  • 1 lb ground lamb
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 whole lime (zested + juiced)
  • ½ whole white onion, diced
  • 1 whole jalapeño, minced
  • 8 whole corn tortillas
  • ½ cup crema or sour cream

Instructions

    Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add ground lamb, breaking it into small pieces with a spoon. Cook until no pink remains, ~6 minutes.

    Stir in chili powder, cumin, lime zest, diced onion, and jalapeño. Cook until fragrant, ~2 minutes.

    Squeeze lime juice into the skillet and stir. Taste and add salt and pepper.

    Warm tortillas in a dry skillet or directly over a flame until pliable, ~30 seconds per side.
