Ingredients

  • ¾ lb shrimp, peeled and deveined
  • 1.5 tbsp cajun spice blend
  • ¼ cup sour cream
  • 2 cups coleslaw mix (pre-shredded cabbage and carrot)
  • 4 count flour tortillas (6-inch)
  • 1 count lime

Instructions

    Pat shrimp dry with paper towels. Toss with cajun spice blend and a pinch of salt.

    Heat 1 tbsp oil in a 12-inch cast iron skillet over high heat until it shimmers, about 1 minute.

    Add shrimp and sear without moving for 90 seconds until the bottoms turn opaque and edges blacken.

    Flip shrimp and sear 60 seconds more until just cooked through. Transfer to a plate.

    Stir sour cream, 1 tbsp lime juice, and salt into coleslaw mix until evenly coated.

    Warm tortillas in the same skillet 30 seconds per side. Divide shrimp and slaw among tortillas, squeeze lime over top.
