Ingredients
- 1.5 lb lamb shoulder or leg, cut into 1-inch cubes
- 1 large yellow onion, cut into 1-inch pieces
- 3 cloves garlic, minced
- 2 tbsp chili paste (sambal oelek or similar)
- 1 tbsp white vinegar
- 1 tsp brown sugar

Pat lamb dry and season with salt and black pepper.

Whisk garlic, chili paste, vinegar, and brown sugar in a small bowl until smooth.

Thread lamb and onion pieces alternately onto 8 wooden skewers, dividing evenly.

Brush skewers generously on all sides with the chili paste mixture.

Arrange skewers on a broiler pan. Broil 6 inches from heat for 8–10 minutes, turning halfway, until lamb edges char and interior is medium-rare.
