Ingredients

  • 1.5 lb lamb shoulder or leg, cut into 1-inch cubes
  • 1 large yellow onion, cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 2 tbsp chili paste (sambal oelek or similar)
  • 1 tbsp white vinegar
  • 1 tsp brown sugar

Instructions

    Pat lamb dry and season with salt and black pepper.

    Whisk garlic, chili paste, vinegar, and brown sugar in a small bowl until smooth.

    Thread lamb and onion pieces alternately onto 8 wooden skewers, dividing evenly.

    Brush skewers generously on all sides with the chili paste mixture.

    Arrange skewers on a broiler pan. Broil 6 inches from heat for 8–10 minutes, turning halfway, until lamb edges char and interior is medium-rare.

    Rest 2 minutes on the pan. Serve hot with lemon wedges and extra chili paste on the side.
