Ingredients

  • 1.5 lbs ground beef
  • 3 whole dried chiles (guajillo or ancho), stemmed and seeded
  • 1 can (14.5 oz) canned crushed tomatoes
  • ½ cup beef broth
  • ½ whole white onion
  • 1 tsp cumin

Instructions

    Tear dried chiles into pieces. Pour 1/2 cup boiling water over them and let soak 3 minutes until soft.

    Blend softened chiles with their soaking liquid until smooth. Press through a fine sieve into a bowl; discard solids.

    Brown ground beef in a large skillet over medium-high, breaking it up with a spoon, until no pink remains, about 6 minutes.

    Add finely diced onion to the beef, stir, and cook until onion softens, about 2 minutes.

    Stir in the chile puree, crushed tomatoes, broth, and cumin. Simmer uncovered for 8 minutes until sauce thickens slightly.

    Taste and season with salt and pepper. Serve hot over rice, with beans, or on warm tortillas.
