Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ¼ cup natural peanut butter
  • 2 tbsp soy sauce
  • ½ whole lime (juiced)
  • 1 tbsp sriracha or chili paste
  • ¼ cup coconut milk

Instructions

    Whisk peanut butter, soy sauce, lime juice, sriracha, and coconut milk in a bowl until smooth.

    Thread chicken strips onto skewers, leaving a 1/2-inch gap between pieces.

    Heat 1 tbsp oil in a large skillet over medium-high until shimmering, about 60 seconds.
