Ingredients

  • 1 lb chicken breast
  • 2 medium bell pepper (any color)
  • 2 tbsp fajita seasoning
  • 2 cups rice (cooked or microwave packet)
  • ½ cup guacamole

Instructions

    Cut chicken breast into 1/2-inch strips. Slice peppers into 1/2-inch-thick strips.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

    Add chicken and fajita seasoning, stirring often, until chicken is cooked through and golden, 8–10 minutes.

    Add peppers and cook, stirring occasionally, until they're slightly soft with char, 4–5 minutes.

    Divide rice between bowls. Top with chicken-pepper mixture and a dollop of guacamole. Serve hot.
