Ingredients
- 1 lb chicken thighs
- 1 medium green papaya
- 1 inch ginger
- 4 cups chicken broth
- 3 stalks green onions
- 1 tbsp fish sauce

Peel and slice the 1-inch ginger into thin coins. Cut the 1 lb chicken thighs into bite-size pieces. Peel the 1 medium green papaya, remove seeds, and slice into 1/2-inch wedges.

In a pot over medium heat, add the ginger and 1 tbsp fish sauce. Cook until fragrant, about 1 minute.

Add the chicken pieces and cook until they turn white on all sides, about 3 minutes.

Pour in the 4 cups chicken broth and bring to a boil. Add the papaya wedges, reduce heat to low, and simmer until papaya is tender and chicken is cooked through, about 10 minutes.
