Ingredients

  • 1 cup tapioca starch (cassava flour)
  • ½ cup whole milk
  • 1.5 cups sharp cheddar or mozzarella, shredded
  • ½ cup parmesan, grated
  • 2 whole eggs, large
  • 2 tbsp neutral oil (for the pan)

Instructions

    Heat oven to 375°F. Line a small sheet pan with parchment or lightly oil it.

    Whisk eggs and milk together in a bowl until fully combined, ~30 seconds.

    Add tapioca starch, cheddar, and parmesan to the bowl and fold gently until a thick, sticky dough forms.

    Oil your hands lightly and pinch off golf-ball-sized pieces of dough. Roll gently into balls and arrange on the pan.

    Bake until puffed and golden brown, ~12 minutes. Tops should look dry and glossy.
