Ingredients

  • 4 cups frozen hash browns
  • 6 slices bacon, chopped
  • 1.5 cups sharp cheddar cheese, shredded
  • 6 large eggs
  • 1 pinch salt and black pepper to taste
  • 1 tbsp butter

Instructions

  1. 1

Preheat oven to 375°F. Cook chopped bacon in a 10-inch skillet over medium heat until crispy, ~8 minutes.

  2. 2

Transfer bacon to a paper towel. Pour off all but 1 tbsp bacon fat from the skillet.

  3. 3

Add frozen hash browns directly to the skillet. Break up any clumps with a wooden spoon and stir until some pieces begin to brown, ~5 minutes.

  4. 4

Spread hash browns evenly in the skillet. Sprinkle cooked bacon and cheddar cheese over the top.

  5. 5

Whisk together eggs, salt, and pepper in a small bowl until combined.

  6. 6

Pour egg mixture evenly over the hash browns. Dot with 1 tbsp butter.

  7. 7

Transfer skillet to oven. Bake until eggs set and the top is light golden, 8–10 minutes.

  8. 8

Remove from oven and let rest 2 minutes. Serve directly from the skillet.
