Ingredients
- 1 cup quick grits (instant polenta)
- 1 cup sharp cheddar cheese, shredded
- 4 slices bacon, chopped
- 1 lb large shrimp, peeled and deveined
- 1.5 tbsp cajun seasoning
- ½ medium yellow onion, diced
- 2 cups chicken broth
- ¼ cup heavy cream

Cook bacon in a large skillet over medium-high heat, breaking into small pieces, until crispy, about 5 minutes. Remove with a slotted spoon.

Bring chicken broth and cream to a boil in the same skillet; whisk in grits slowly until smooth and no lumps remain.

Reduce heat to medium-low and stir constantly for 8–10 minutes until grits are tender and creamy, then stir in cheddar until melted. Transfer to a bowl.

Toss shrimp with cajun seasoning. Add onion to the skillet and sauté over medium-high until softened, about 2 minutes.

Add shrimp to the skillet and sear without stirring for 2 minutes, then flip and cook another 1–2 minutes until pink throughout.

Serve shrimp and sauce over creamy grits. Top with crispy bacon.
