Ingredients

  • ¾ cup stone-ground grits (quick or instant)
  • ¾ cup sharp cheddar cheese, shredded
  • ¾ lb large shrimp, peeled and deveined
  • 4 oz andouille sausage, sliced thin
  • 1.5 tsp cajun seasoning
  • ¾ cup croutons (for serving)

Instructions

    Bring 3 cups salted water to a boil in a large skillet over medium-high heat.

    Whisk grits into the boiling water slowly, then reduce heat to medium and stir often for 5 minutes until thick.

    Stir in cheddar and 2 tbsp butter until melted and smooth. Season with salt and pepper, then slide onto a plate.

    Wipe the skillet clean. Add 1 tbsp oil over medium-high; brown sausage pieces for 2 minutes, breaking them up.

    Add shrimp and cajun seasoning. Sear 90 seconds per side until opaque and edges curl. Don't stir.

    Spoon shrimp and sausage over grits. Top with croutons and serve immediately.
