Ingredients
- ¾ cup stone-ground grits (quick or instant)
- ¾ cup sharp cheddar cheese, shredded
- ¾ lb large shrimp, peeled and deveined
- 4 oz andouille sausage, sliced thin
- 1.5 tsp cajun seasoning
- ¾ cup croutons (for serving)

Bring 3 cups salted water to a boil in a large skillet over medium-high heat.

Whisk grits into the boiling water slowly, then reduce heat to medium and stir often for 5 minutes until thick.

Stir in cheddar and 2 tbsp butter until melted and smooth. Season with salt and pepper, then slide onto a plate.

Wipe the skillet clean. Add 1 tbsp oil over medium-high; brown sausage pieces for 2 minutes, breaking them up.

Add shrimp and cajun seasoning. Sear 90 seconds per side until opaque and edges curl. Don't stir.
