Smashed Potato & Pork Stoëmp
Belgian stoëmp meets TikTok dinner: crispy pork chops layered over buttery smashed potatoes and sautéed cabbage. One skillet, 20 minutes, totally craveable.

Ingredients
- 2 pieces pork chops (boneless, ~3/4 inch thick)
- 1 lb waxy potatoes (like Yukon Gold)
- ½ small head green cabbage, sliced thin
- 3 tbsp butter
- 2 tbsp whole grain mustard
- 4 sprigs fresh thyme
- 1 medium shallot, minced
- ½ cup chicken or vegetable broth

Cut potatoes into 1-inch chunks. Boil in salted water until fork-tender, ~10 minutes.

While potatoes cook, pat pork dry and season with salt and pepper.

Heat 1 tbsp butter in a large skillet over medium-high until foaming. Sear pork 3 minutes per side until golden; remove and set aside.

In the same skillet, sauté shallot and cabbage with thyme sprigs 4 minutes until cabbage wilts and edges brown.

Drain potatoes. Mash with remaining 2 tbsp butter, mustard, salt, and pepper until creamy. Stir into cabbage mixture.

Nestle pork chops on top of the smashed mixture and serve hot.
