- ¾ lb ground beef
- 4 6-inch corn tortillas
- 1 cup shredded cheese (Oaxaca or mozzarella)
- ¼ cup diced white onion
- 1 large jalapeño, sliced thin
- ½ cup neutral cooking oil

Brown ground beef in a skillet over medium-high heat, breaking it apart with a spoon until no pink remains, ~5 minutes. Drain excess fat and season with salt and pepper.
