Ingredients

  • ¾ lb ground beef
  • 4 6-inch corn tortillas
  • 1 cup shredded cheese (Oaxaca or mozzarella)
  • ¼ cup diced white onion
  • 1 large jalapeño, sliced thin
  • ½ cup neutral cooking oil

Instructions

    Brown ground beef in a skillet over medium-high heat, breaking it apart with a spoon until no pink remains, ~5 minutes. Drain excess fat and season with salt and pepper.

    Heat oil in a deep skillet to 350°F (or until a tortilla sizzles immediately when touched to it), ~3 minutes.

    Carefully fry each tortilla until the edges curl and turn golden, ~90 seconds per side. Remove and drain on a paper towel.

    Fill each crispy tortilla shell with a spoonful of beef, a pinch of onion, a slice of jalapeño, then a handful of cheese on top.

    Return filled shells to the skillet, cheese-side up, and fry until the cheese melts and the bottom crisps, ~2 minutes.

    Transfer to a plate and serve immediately with lime or salsa.
