Ingredients

  • 4 medium onion, sliced thin
  • 6 cups beef broth
  • 4 slices, 1-inch thick bread, crusty (baguette or similar)
  • 4 oz swiss cheese, sliced

Instructions

  1. 1

Heat a large pot over medium-high and add sliced onions with a pinch of salt.

  2. 2

Cook onions, stirring often, until they turn golden brown and smell sweet, about 10 minutes.

  3. 3

Pour in beef broth and bring to a simmer for 5 minutes, then taste and adjust salt and pepper.

  4. 4

While soup simmers, arrange bread slices on a baking sheet and toast in a 400°F oven until golden, about 4 minutes.

  5. 5

Ladle soup into broiler-safe bowls, top each with a slice of toasted bread and Swiss cheese.

  6. 6

Broil 3 inches from heat until cheese melts and bubbles, about 2 minutes, then serve immediately.
