Ingredients

  • 1 lb ground beef
  • 2 cups enchilada sauce
  • 8 6-inch tortillas flour tortillas
  • 1.5 cups cheddar cheese, shredded

Instructions

    Brown ground beef in a 12-inch skillet over medium-high, breaking up clumps, until no pink remains, ~6 minutes.

    Pour enchilada sauce over beef and stir to coat evenly.

    Tear tortillas into bite-sized pieces and stir into the beef sauce until coated.

    Sprinkle cheddar cheese over the top in an even layer.

    Cover skillet and cook over medium until cheese melts and edges are golden, ~8 minutes.
