Ingredients
- 12 oz pasta (such as penne or rigatoni)
- 2 tbsp olive oil
- 1 medium, chopped onion
- 24 oz canned crushed tomatoes
- 2 cups shredded mozzarella
- ½ cup grated parmesan
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Bring a large pot of salted water to a boil and cook the 12 oz pasta until just shy of al dente, about 2 minutes less than package directions. Drain and set aside.

While pasta cooks, heat 2 tbsp olive oil in a large oven-safe skillet over medium. Add 1 chopped onion and cook until soft and translucent, about 5 minutes.

Stir in the 24 oz crushed tomatoes, 1 tsp salt, and 0.5 tsp black pepper. Simmer until slightly thickened, about 5 minutes. Taste and adjust seasoning if needed.

Add the drained pasta to the skillet and toss to coat with the sauce. Sprinkle the 2 cups mozzarella and 0.5 cup parmesan evenly over the top.

Transfer the skillet to the oven and bake until the cheese is melted and bubbly with golden spots, about 15 minutes. Let rest 5 minutes before serving.
