Ingredients

  • 3 medium zucchini
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 ounces mozzarella cheese
  • ½ cup parmesan cheese
  • ½ cup breadcrumbs
  • 1 cup potato chips

Instructions

  1. 1

Preheat oven to 375°F. Slice 3 medium zucchini into 1/4-inch rounds. Toss with 1 tsp salt and let sit in a colander for 15 minutes to draw out moisture.

  2. 2

Pat zucchini dry with paper towels. Brush both sides with 2 tbsp olive oil and arrange on a baking sheet. Roast for 10 minutes until slightly softened.

  3. 3

Spread 1/2 cup marinara sauce in the bottom of a 9x13-inch baking dish. Layer half the zucchini over the sauce.

  4. 4

Top with 1 cup marinara sauce, half the mozzarella, and half the parmesan. Repeat layers with remaining zucchini, sauce, and cheeses.

  5. 5

In a small bowl, mix 1/2 cup breadcrumbs with 1 cup crushed potato chips. Sprinkle evenly over the top.

  6. 6

Bake uncovered for 25-30 minutes until bubbly and golden brown on top. Let rest 5 minutes before serving.

  7. 7

Serve hot, garnished with fresh basil if desired.
