Ingredients

  • 3 tbsp butter
  • ½ cup all-purpose flour
  • 1 cup milk
  • 1.5 cups cheddar cheese, shredded
  • 2 large egg
  • 1 cup breadcrumbs
  • 2 cups vegetable oil
  • ½ cup sour cream

    Melt the 3 tbsp butter in a saucepan over medium heat. Add the 0.5 cup flour and stir constantly until the mixture turns light golden, about 2 minutes.

    Slowly whisk in the 1 cup milk, stirring until the sauce thickens and pulls away from the pan, about 3-4 minutes.

    Remove from heat and stir in the 1.5 cups cheddar until melted. Season with salt and pepper. Spread the mixture on a plate and refrigerate until firm, about 30 minutes.

    Shape the chilled mixture into 12 small cylinders. Set up a breading station: beat the 2 eggs in one bowl, place the 1 cup breadcrumbs in another.

    Dip each croquette into the beaten egg, then roll in breadcrumbs to coat evenly.

    Heat the 2 cups vegetable oil in a deep skillet to 350°F (175°C). Fry the croquettes in batches, turning occasionally, until golden brown and crisp, about 3-4 minutes per batch. Drain on paper towels.
