- ½ cup all-purpose flour
- 1 cup milk
- 1.5 cups cheddar cheese, shredded
- 2 large egg
- 1 cup breadcrumbs
- 2 cups vegetable oil
- ½ cup sour cream

Melt the 3 tbsp butter in a saucepan over medium heat. Add the 0.5 cup flour and stir constantly until the mixture turns light golden, about 2 minutes.

Slowly whisk in the 1 cup milk, stirring until the sauce thickens and pulls away from the pan, about 3-4 minutes.

Remove from heat and stir in the 1.5 cups cheddar until melted. Season with salt and pepper. Spread the mixture on a plate and refrigerate until firm, about 30 minutes.

Shape the chilled mixture into 12 small cylinders. Set up a breading station: beat the 2 eggs in one bowl, place the 1 cup breadcrumbs in another.
