Ingredients
- 2 cups chicken broth
- 2 tbsp butter
- 1 cup all-purpose flour
- 1.5 cups shredded mozzarella cheese
- 2 large egg
- 1.5 cups breadcrumbs
- 3 cups vegetable oil
- ½ tsp salt

In a medium saucepan, bring the 2 cups chicken broth and 2 tbsp butter to a boil over high heat.

Reduce heat to low, add the 1 cup flour all at once, and stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides, about 2 minutes.

Remove from heat and let cool for 5 minutes. Beat in the 2 eggs one at a time, mixing well after each, until the dough is glossy and sticky.

Stir in the 1.5 cups mozzarella and 0.5 tsp salt until fully combined. The dough will be soft and stretchy.

With wet hands, shape the dough into 1.5-inch balls or teardrop shapes. Roll each in the 1.5 cups breadcrumbs to coat evenly.

Heat the 3 cups oil in a deep pot to 350°F. Fry the croquettes in batches without crowding, turning occasionally, until golden brown and crispy, about 4-5 minutes per batch.
