Ingredients

  • ¾ lb ground beef
  • 3 tbsp tahini
  • 1 whole lemon (juiced)
  • 1 tsp cumin
  • 1.5 cups cooked rice (white or brown)
  • ¼ cup fresh parsley, chopped

Instructions

  1. 1

Mix ground beef with 0.5 tsp salt, cumin, and black pepper until just combined—don't overwork.

  2. 2

Form beef mixture into 6–8 oblong patties or meatballs and thread onto skewers (or shape into kebab-style logs).

  3. 3

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

  4. 4

Working in batches if needed, sear kebabs 4–5 minutes per side until deeply charred and cooked through.

  5. 5

Whisk tahini, lemon juice, 2 tbsp water, and a pinch of salt until smooth and pourable.

  6. 6

Serve kebabs over warm rice, drizzle with tahini sauce, and top with fresh parsley.

Tools you’ll need

  • large skillet (12-inch cast iron or stainless steel)
  • skewers (metal or soaked wooden)
  • small bowl for tahini sauce
  • whisk or fork
