Ingredients

  • 1 lb boneless chicken breast or thigh, cut into 1-inch cubes
  • ¾ cup roasted salted cashews
  • 3 tbsp soy sauce
  • 1.5 tbsp honey
  • 1 tbsp fresh ginger, minced
  • 2 whole scallions, sliced thin

Instructions

    Heat 2 tbsp neutral oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add chicken pieces and cook without stirring for 2 minutes, then stir and brown for 3 more minutes until mostly opaque.

    Stir in ginger and cook for 30 seconds until fragrant.

    Pour soy sauce and honey into the skillet, then stir in cashews and toss until the sauce coats everything and turns glossy, about 2 minutes.
