Ingredients
- 8 pieces (about 3 lbs) chicken thighs, bone-in skin-on
- ½ cup apple cider vinegar
- 3 tbsp ketchup
- 2 tbsp brown sugar
- 1 tbsp hot sauce (Frank's RedHot or similar)
- ½ tsp black pepper
Instructions
- 1
Pat chicken dry with paper towels. Season generously all over with salt and black pepper.
- 2
Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 1 minute.
- 3
Lay chicken skin-side down in the skillet. Don't move it for 6 minutes until skin is deep golden and crispy.
- 4
Flip chicken skin-side up. While it cooks 4 more minutes, whisk vinegar, ketchup, brown sugar, hot sauce, and pepper in a small bowl.
- 5
Pour glaze over chicken. Toss gently to coat, then simmer uncovered 3 minutes until glaze clings and chicken is cooked through.
- 6
Serve hot with pan drippings spooned over the top.
