Ingredients

  • 8 pieces (about 3 lbs) bone-in, skin-on chicken thighs
  • ½ cup yellow mustard
  • ¼ cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp hot sauce (Frank's or similar)

Instructions

    Pat chicken dry. Season all over with salt and black pepper.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering, ~90 seconds.

    Working in batches if needed, sear chicken skin-side down until golden and crispy, 5–6 minutes. Flip and sear 4 minutes more.

    Whisk mustard, vinegar, brown sugar, paprika, and hot sauce in a bowl until smooth.

    Pour sauce over chicken, reduce heat to medium, and simmer uncovered 8–10 minutes until glaze clings and chicken reaches 165°F.
