Ingredients

  • 1 cup, divided (3/4 cup for caramel + 1/4 cup for custard) granulated sugar
  • 1.5 cups whole milk
  • ½ cup sweetened condensed milk
  • 4 whole large eggs
  • 1 tsp vanilla extract
  • 2 cups water

    Combine 3/4 cup sugar in a small saucepan over medium-high heat. Stir constantly until amber and fragrant, about 4 minutes.

    Quickly pour caramel into a round 6-inch ramekin or small bowl, coating the bottom and sides. Set aside to cool.

    Whisk eggs, whole milk, condensed milk, remaining 1/4 cup sugar, and vanilla until smooth. Pour mixture through a fine sieve into the caramel-lined ramekin.

    Place ramekin in a larger pot or deep skillet. Pour hot water into the pot until it reaches halfway up the ramekin's sides, creating a water bath.

    Cover the pot loosely with foil. Simmer over medium-low heat for 8 minutes, until custard is just set but still slightly jiggly in the center.

    Remove ramekin from water bath and chill in the refrigerator for at least 30 minutes (or serve warm). Run a thin knife around the edge and invert onto a plate to unmold.
