Ingredients
- 1.5 cups sushi rice
- 2 tbsp rice vinegar
- 2 sheets nori (seaweed sheets)
- 4 oz imitation crab stick, flaked
- ½ whole avocado, peeled
- ¼ whole cucumber
- 3 tbsp soy sauce (for serving)

Combine warm cooked sushi rice and rice vinegar in a bowl. Stir gently to coat.

Slice avocado and cucumber into thin lengthwise strips.

Place one nori sheet shiny-side down on a bamboo mat. Spread half the rice in a thin layer, leaving a 0.5-inch border at the top.

Arrange half the crab, avocado, and cucumber in a horizontal line across the center of the rice.

Roll tightly away from you, using the mat to guide it. Seal the edge with a dab of water.

Repeat with remaining nori sheet and fillings. Slice each roll into 6-8 pieces with a sharp, wet knife.
