Ingredients

  • 3 medium onions, sliced thin
  • 3 tbsp butter
  • 8 oz pasta (penne or rigatoni)
  • ½ cup parmesan, finely grated

Instructions

    Melt butter in a large skillet over medium-low heat, then add sliced onions with a pinch of salt.

    Cook onions, stirring occasionally, until deep golden brown and very soft, about 15 minutes.

    While onions cook, boil pasta in salted water until al dente, then reserve 1 cup pasta water before draining.

    Add drained pasta to the onions, then pour in 0.5 cup reserved pasta water and stir until saucy.

    Remove from heat, fold in parmesan and black pepper, then add more pasta water if needed for creaminess.
