Ingredients

  • 16 oz cream cheese, cold
  • ½ cup heavy cream, cold
  • ½ cup sweetened condensed milk
  • 1 whole egg yolk
  • ½ tsp vanilla extract
  • 1 tbsp granulated sugar (for torching)

Instructions

    Add cream cheese, heavy cream, and condensed milk to a blender. Pulse until smooth, ~45 seconds.

    Add egg yolk and vanilla extract. Pulse again until completely smooth, no lumps visible.

    Divide mixture evenly between 4 ramekins (or one small shallow baking dish). Smooth the tops with a spatula.

    Sprinkle 1 tsp sugar over the top of each ramekin, covering the surface evenly.

    Use a kitchen torch to caramelize the sugar until it turns deep amber and crackles slightly, ~90 seconds per ramekin.

    Let cool 2 minutes, then serve immediately while the burnt top is still crackling.
