Ingredients

  • 6 oz buckwheat noodles
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 2 medium scallions
  • 1 tsp sesame seeds

Instructions

  1. 1

Cook the 6 oz buckwheat noodles in a pot of boiling water until tender, about 5-7 minutes. Drain and rinse briefly with cold water to stop cooking.

  2. 2

While the noodles cook, whisk together the 3 tbsp soy sauce, 1 tbsp sesame oil, and 1 tsp honey in a small bowl until the honey dissolves.

  3. 3

Thinly slice the 2 scallions, separating the white parts from the green tops.

  4. 4

In a large bowl, toss the drained noodles with the sauce and the white parts of the scallions until evenly coated.

  5. 5

Top with the green scallions and 1 tsp sesame seeds. Serve immediately, warm or at room temperature.
