Ingredients

  • 6 oz chorizo sausage, crumbled
  • 2 cups tortilla chips
  • ¾ cup cheddar or cotija cheese, shredded
  • 4 large eggs
  • ½ cup salsa
  • 1 whole jalapeño, sliced
  • 2 tbsp fresh cilantro or scallions, chopped

Instructions

    Heat a 12-inch skillet over medium-high. Brown chorizo 4–5 minutes, breaking it up with a spoon until cooked through.

    Scatter tortilla chips over the chorizo, then sprinkle cheese evenly on top. Cook 2 minutes until cheese melts.
