Ingredients
- 4 links breakfast sausage links
- 2 medium potatoes (russet or yellow), diced
- ½ medium yellow onion, diced
- 4 large eggs
- ½ cup cheddar cheese, shredded
- 2 tbsp fresh chives or parsley, chopped

Slice sausage into 1/4-inch rounds. Heat a 12-inch cast-iron skillet over medium-high heat for 60 seconds.

Add sausage and cook, breaking into small bits, until browned on edges, about 4 minutes. Remove to a plate.

Add diced potatoes and onion to the skillet; cook without stirring for 3 minutes until the bottom edges brown.

Stir and cook until potatoes are fork-tender and crispy, about 5 more minutes.

Return sausage to the skillet, push mixture to the sides, and crack eggs directly into the center well.

Cover and cook until egg whites are set but yolks still jiggle, 2–3 minutes. Top with cheese and chives.
