Ingredients
- 2 cups all-purpose flour
- 1.5 cups mixed dried fruit (raisins, sultanas, currants)
- 1 cup strong brewed black tea, hot
- ¼ cup Irish whiskey (or brandy)
- ¾ cup brown sugar
- 1 large eggs
- 1.5 tsp baking powder

Pour hot tea and whiskey over the dried fruit in a bowl. Let soak 5 minutes until fruit is plump.

Whisk together flour, baking powder, and salt in a separate bowl.

Stir brown sugar and egg into the fruit mixture until combined.

Fold the fruit mixture into the dry ingredients until just combined. Don't overmix.

Pour batter into a parchment-lined 9-inch round or 8x8-inch square cake pan.
