Ingredients

  • 1.5 cups all-purpose flour
  • 6 tbsp cold butter, cubed
  • 2 cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 whole lemon (zested and juiced)
  • ¼ cup sour cream

Instructions

    Toss blueberries with sugar and lemon zest and juice in a bowl. Let sit while you make the crust.

    Mix flour, salt, and cold butter cubes with your fingertips until the mixture looks like breadcrumbs, ~3 minutes.

    Stir sour cream into the flour mixture until just combined. Press dough into a 10-inch cast iron skillet, covering the bottom.

    Pour blueberries and all their juice into the center of the dough. Leave a 0.5-inch border of bare crust around the edge.

    Bake at 400°F for 14–16 minutes until the crust edges are golden brown and blueberries bubble gently.
