Ingredients

  • 2 cups all-purpose flour
  • ¾ cup cold butter, cubed
  • ½ tsp salt
  • 6 tbsp ice water
  • 3 cups fresh blueberries
  • ½ cup granulated sugar
  • 2 tbsp lemon juice

Instructions

    Mix flour and salt in a bowl. Add cold butter cubes and work together with fingertips until mixture resembles coarse sand.

    Sprinkle ice water over dough, 1 tbsp at a time, mixing gently until just combined. Form into a disk, wrap in plastic, chill 20 minutes.

    Preheat oven to 400°F. Roll chilled dough to fit a 9-inch pie dish; press in gently. Trim edge and crimp with a fork.

    Toss blueberries with sugar and lemon juice in a bowl until coated, about 1 minute.

    Pour blueberry mixture into crust, spreading evenly. Bake until crust is golden and filling bubbles at edges, 30–35 minutes.
