Ingredients

- ¾ cup cold butter, cubed
- ½ tsp salt
- 6 tbsp ice water
- 3 cups fresh blueberries
- ½ cup granulated sugar
- 2 tbsp lemon juice

Mix flour and salt in a bowl. Add cold butter cubes and work together with fingertips until mixture resembles coarse sand.

Sprinkle ice water over dough, 1 tbsp at a time, mixing gently until just combined. Form into a disk, wrap in plastic, chill 20 minutes.

Preheat oven to 400°F. Roll chilled dough to fit a 9-inch pie dish; press in gently. Trim edge and crimp with a fork.
