Ingredients
- 1.5 cups all-purpose flour
- ½ cup butter, cold and cubed
- 4 tbsp granulated sugar
- 3 medium apples (Honeycrisp or Granny Smith), cored and sliced thin
- 1 tsp ground cinnamon
- ½ tsp lemon zest
- 1 whole egg yolk (for egg wash)
- 2 tbsp apricot jam or apple butter (for glaze)

Mix flour, 2 tbsp sugar, and a pinch of salt in a bowl. Rub cold butter in with your fingers until breadcrumb texture.

Press two-thirds of the dough into a 10-inch cast-iron skillet, covering the bottom and sides. Chill while you prep apples.

Toss sliced apples with cinnamon, lemon zest, and remaining 2 tbsp sugar. Layer over the crust, mounding slightly in the center.

Roll remaining dough thin between parchment sheets. Cut into thin strips and lay in a lattice over the apples.

Brush lattice with egg yolk. Bake at 400°F for 15 minutes until golden brown and apples are tender.
