Ingredients

  • 1.5 cups all-purpose flour
  • ½ cup butter, cold and cubed
  • 4 tbsp granulated sugar
  • 3 medium apples (Honeycrisp or Granny Smith), cored and sliced thin
  • 1 tsp ground cinnamon
  • ½ tsp lemon zest
  • 1 whole egg yolk (for egg wash)
  • 2 tbsp apricot jam or apple butter (for glaze)

Instructions

  1. 1

Mix flour, 2 tbsp sugar, and a pinch of salt in a bowl. Rub cold butter in with your fingers until breadcrumb texture.

  2. 2

Press two-thirds of the dough into a 10-inch cast-iron skillet, covering the bottom and sides. Chill while you prep apples.

  3. 3

Toss sliced apples with cinnamon, lemon zest, and remaining 2 tbsp sugar. Layer over the crust, mounding slightly in the center.

  4. 4

Roll remaining dough thin between parchment sheets. Cut into thin strips and lay in a lattice over the apples.

  5. 5

Brush lattice with egg yolk. Bake at 400°F for 15 minutes until golden brown and apples are tender.

  6. 6

Warm jam with 1 tsp water, brush over hot pie. Cool 2 minutes, serve warm with a whole apple on the side if desired.
